Vegan Macaroni Salad

Ingredients

  • 10 - 12 oz spiral rice pasta
  • 1 med-small head of broccoli, chopped
  • olive oil
  • Himalayan salt (or Atlantic sea salt)
  • garlic powder
  • 3/4 red bell pepper, chopped
  • 3/4 orange bell pepper, chopped
  • several grape tomatoes cut in half
  • 10+ black or kalamata olives cut in half
  • 1/8 cup chopped chives (or thin sliced onion)
  • 1/4 cup chopped parsley
  • handful of miner's lettuce or small baby spinach leaves
  • Soy Free Veganaise

Instructions

  1. Cook rice pasta according to directions in plenty of water
  2. While pasta is cooking, lightly steam broccoli
  3. Drain pasta and place in a serving bowl with the steamed broccoli
  4. Sprinkle with equal amounts of garlic powder and salt to taste (1/8 - 1/4 teaspoon)
  5. Drizzle with olive oil to apply an even thin coat
  6. Mix well
  7. Taste and add more olive oil if not evenly coated; add more garlic powder and sea salt if necessary - the pasta should already taste good at this point
  8. Set aside to cool
  9. Once cooled to room temperature, add chopped peppers, grape tomatoes, olives, chives, miner's lettuce (or baby spinach), and parsley
  10. Add one or two small dollops of Soy Free Veganaise
  11. Stir well; taste and add more Veganaise and/or seasonings to taste

Notes

Tip: Rice pasta in particular can become very starchy if you don't cook in ample water. Use almost double the water when cooking rice pasta compared to wheat pasta.
