Easy Make Ahead Side Dish – Broccoli Salad

Still deciding which sides will accompany your holiday meal?  Here’s an easy side dish that can even be made the night before.  It’s a favorite family recipe that is bright, light, and delicious!  Try not to eat it all before the guests arrive.

Don’t let the number of steps fool you – it’s an ultra easy recipe!  I broke it all down for the novice who may need guidance preparing the broccoli, steaming, etc.  I promise, this simple and healthy dish is surprisingly delicious!

Broccoli Salad


  • 2 heads of broccoli
  • 2 Tbsp olive oil
  • 2 Tbsp unpasteurized apple cider vinegar
  • 1/8 - 1/4 tsp of sea salt
  • 1/8 - 1/4 tsp of garlic powder
  • Crushed red pepper to taste


  1. Florets - Cut into medium bite-sized pieces.
  2. Stalks - Cut off 1" - 2" of the tough end from each main stalk; peel off tough outer layer; cut into medium bite-sized pieces.
  3. Place all of the florets and cut up stalks in colander and give it a good rinse.
  4. Add the stalks to the steamer basket first, followed by florets.
  5. Place steam basket in pot when water is boiling.
  6. Cover pot and steam until bright green and tender but still semi-crunchy; this will only take about 5 minutes.
  7. Drain but don't run under cold water.
  8. Place drained hot broccoli in bowl and sprinkle with the sea salt, garlic powder and crushed red pepper.
  9. Drizzle the olive oil first and then the vinegar - toss well.
  10. Taste and adjust spices and dressing (try not to eat the whole bowl at this point).
  11. Serve warm or at room temperature.
  12. Can also cover and refrigerate to serve next day. In either case - toss occasionally.
